Broccoli Potato Kugel

4 potatoes, shredded
4 carrots, shredded
2 lb. frozen chopped broccoli, thawed and drained
5 eggs
3/4 C. mayonnaise
2 T. onion flakes
1 T. salt

Beat eggs.  Add mayonnaise, salt, and onion flakes.  Add all vegetables to beaten egg mixture and pour into greased baking dish.  Bake at 350*F uncovered for about 45 minutes.

Rice cakes – all varieties
Soy chips
Apple chips
Popcorn
Bamba
Nuts – cashew, peanuts, almonds, pistachios, etc.
Sunflower seeds
String cheese
Plain yogurt with fresh fruit
Cottage cheese
American cheese
Natural peanut butter or soy nut butter
Apple butter – no added sugar - instead of jelly
Chumus
Hard boiled egg
Baby carrots
Pepper strips
Cucumber slices
Grape tomatoes
Celery sticks
Grapes, strawberries, blueberries, apples, pears, plums, peaches, melon, oranges, clementines, honeydew, cantaloupe, pineapple
Baked apples
Frozen bananas
Pickles
Kiwis (cut in half and give each child a spoon)
Canned fruits in natural juices
Unsweetened Applesauce
Salsa and tortilla chips

Drinks

Water – Water should be the main drink served to kids at snack times. Water satisfies thirst and does not have sugar or calories.

Seltzer - Carbonated drinks like seltzer, sparkling water, and club soda are healthy options. They do not contain the sugars, calories, and caffeine of sodas. Serve them alone or try making “healthy sodas” by mixing them with equal amounts of 100% fruit juice.
